A quick, high-protein meal that feels fresh but still actually fills you up.
When you want something lighter but still satisfying
After a while postpartum, heavy meals can be too much, but snacks don’t quite cut it. This recipe strikes a nice balance.
These lettuce wraps are warm, savory, and packed with protein, but still taste fresh and are easy to eat. They’re great for when you want something quick that won’t weigh you down. Plus, the filling is perfect for meal prep and freezing.

Ingredient highlights

- Zucchini, peppers, and carrots: fiber, hydration, and important micronutrients.
- Coconut aminos: adds flavor without making it too salty or heavy.
- Sesame oil: healthy fats and extra flavor
Ingredients (6 servings)
- 1.5–2 lbs ground beef
- 1 tbsp oil
- 3 cloves garlic, minced
- 2 zucchini, diced
- ½ cup carrots, shredded or diced
- 1–2 bell peppers, diced
- 3–4 tbsp coconut aminos
- 1 tbsp sesame oil
Serve with:
- Butter lettuce
Instructions
- Heat oil in a large skillet over medium heat.
- Add ground beef, then cook until browned.
- Add garlic and cook for 1 minute.
- Add zucchini, carrots, and bell peppers.
- Cook for 5–7 minutes until softened.
- Stir in coconut aminos and sesame oil.
- Spoon into butter lettuce and serve.
Freezer prep (highly recommended)
- Cook the filling until fully cooked, then let it cool.
- Portion into freezer-safe containers or bags.
- Lay bags flat in the freezer to save space and speed up thawing later.
- Thaw overnight in the fridge and reheat on the stove.
